"Crafting a Delectable Tuna Niçoise Salad: Fresh, Simple, and Elegant"

Fresh is definitely best, and today I had the pleasure of visiting Café del Rey to learn from a local, Chef Abair. We explored the wonderful ingredients I picked up at McGrath Family Farm and discussed what we could create with them.

Chef Abair suggested we make a Tuna Niçoise salad, a dish that sounds exotic but is actually quite simple to prepare. He began by prepping the tuna, emphasizing the importance of selecting fish with good color, firm flesh, and no strong smell—just a clean ocean scent. The tuna for this dish is traditionally served raw, but Chef Abair noted that it could also be cooked or even substituted with canned tuna for convenience.


Next, we prepared the green beans, or "haricot verts" as they're known in French, cutting them into bite-sized pieces. We also boiled some potatoes until soft and cut them into quarters, making sure everything was fork-friendly. Then, we moved on to the cherry heirloom tomatoes, slicing them in half, and julienned some bell peppers, which involves cutting them into long, thin strips.

For an added layer of flavor, we used olive tapenade, mixing it with the veggies we had prepared. The colors were stunning—truly a feast for the eyes before the taste buds. Chef Abair reminded us that presentation is key; the more appealing a dish looks, the more eager people are to enjoy it.


We returned to the tuna, which was still raw. For those who prefer, a bit of lemon juice can be squeezed over the tuna to "cook" it slightly. We also dressed it with some olive oil and chives for a mild onion flavor. A pinch of salt completed the seasoning.

Putting it all together, the dish looked deceptively fancy yet was straightforward to prepare. Plating the food was the final step, and I couldn't help but feel a bit like a master chef myself. The beauty of this dish lies not only in its presentation but also in the freshness of the locally grown and bought ingredients.


Tasting the finished product was a delightful experience—the freshness of the ingredients really shone through. It was perfect, absolutely beautiful.
